 How to Prepare Karimeen Pollichathu:
 A Traditional Kerala Delicacy

                                                     


Karimeen Pollichathu is one of the most famous seafood dishes of Kerala, mainly enjoyed in the backwater areas of Alappuzha and Kottayam. It is a dish in which Karimeen or Pearl Spot Fish is marinated in spicy masala, covered with a banana leaf, and grilled to perfection. The unique combination of smoky flavors, rich masala, and tender fish makes it a must-try for seafood lovers.


In this blog, we'll take you through a step-by-step guide to making authentic Karimeen Pollichathu at home.


Ingredients You'll Need

For the Fish Marinade:

•  2 whole Karimeen (Pearl Spot Fish), cleaned and slit

•  1 teaspoon turmeric powder

•  1 teaspoon red chili powder

•  1 teaspoon black pepper powder

•  1 teaspoon lemon juice

•  Salt to taste

•  1 tablespoon coconut oil


For the Masala:

•  1 tablespoon coconut oil                  

•  1 teaspoon mustard seeds

•  1 sprig curry leaves

•  1 onion, finely chopped

•  1 tomato, finely chopped

•  1 teaspoon ginger-garlic paste

•  2 green chilies, sliced

•  1 teaspoon red chili powder

•  ½ teaspoon turmeric powder

•  1 teaspoon coriander powder

•  ½ teaspoon black pepper powder

•  ½ teaspoon garam masala

•  ½ cup thick coconut milk

•  Salt to taste


For Wrapping & Cooking:

•  2 banana leaves (lightly wilted over an open flame)

•  Coconut oil for greasing



Step-by-Step Recipe

Step 1: Marinate the Fish

1.   Clean the Karimeen and make a few slits on both sides.

2.   Mix turmeric powder, red chili powder, black pepper powder, lemon juice, salt, and coconut oil into a thick paste.

3.   Rub the marinade all over the fish, including inside the slits.

4.   Let it rest for at least 30 minutes to absorb the flavors.


Step 2: Prepare the Masala

1.    Heat coconut oil in a pan and add mustard seeds. Let them splutter.

2.    Add curry leaves, chopped onions, and green chilies. Sauté until onions turn golden brown.

3.   Add ginger-garlic paste and fry till the raw smell disappears.

4.   Add chopped tomatoes and cook until they become soft.

5.   Add red chili powder, turmeric powder, coriander powder, black pepper powder, and garam masala. Fry for a minute.

6.   Pour the thick coconut milk and mix well. Cook until the masala thickens.

7.   Switch off the stove and let it cool a bit.


Step 3: Wrap the Fish

1.   Use a banana leaf and toast it lightly by holding it above a flame, so that the leaf is slightly soft.

2.   Spread some portion of the masala on the leaf.

3.   Add the marinated Karimeen on top, followed by additional masala over it.

4.   Cover the fish with the banana leaf and then tie it together with a thread or toothpicks.


Step 4: Cooking Karimeen Pollichathu


Option 1: Pan-frying                                     

1.    Heat the tawa or pan and apply coconut oil in it.

2.   Cook the fish with the banana leaf wrapped over it on a pan with low flame for 8-10 minutes on both sides.

3.   Remove it from heat after the banana leaf is charred a bit, and the fish is well-cooked.


Alternative Method: Baking

1. Set oven to 180°C or 350°F

2. Bake the fish on a baking tray with banana leaves wrapped around for 20-25 minutes.


Serving Instructions

Serve hot with steamed rice, Kerala parotta, or appam.

✔ Garnish with fresh curry leaves and drizzle coconut oil for extra flavor.

✔Team it up with lemon wedges and raw onion slices on the side.


                                           


Tips to Make the Best Karimeen Pollichathu

✔Make use of fresh Karimeen for the best flavor and texture

✔Marinate the fish longer, overnight if possible, for deep flavors.

✔Banana leaves add a smoky flavor. On its absence, use aluminum foil as an alternative.

✔ Allow the fish to absorb all the masala flavors by cooking it on low heat and not to burn.
